Our MD, Mr. Sumit Agarwal, an IIT Kanpur graduate, is a multi-tasker with a very hectic life and work induced stress. He consequently fell prey to lifestyle diseases like IBS, leaky gut, diabetes, fistula, blood pressure etc.

He has undergone many diabetes reversal courses, consulted nutritionists and studied the effect of different foods on his diabetes and stomach conditions (responsible for other disorders) and experimented on himself to come up with the types of foods that can reverse many of our chronic lifestyle related diseases.

There is hardly any option available to a health-conscious individual looking for these types of health foods that also appeal to his palate. It's not easy to curate such a menu. The LETTUCE LAB tries to bridge this gap…in a way that tingles your taste buds.

Dairy Free (Vegan)

Many of us don't realize the damage that animal proteins do to our body because we have been taught since our childhood that milk is the richest source of nutrition for humans. He observed that giving up on dairy products like milk, cheese, paneer, curd, chena, ghee etc, lead to an immediate improvement in the well being. The same may not be true for everyone, but holds true for most people who have desk jobs. In the olden days not only was the quality of milk different, but the people had a very active lifestyle, which included hard work in fields, grazing animals or fetching water from wells. Our dishes are 100% dairy-free, from loaded cheesy pizzas to creamy sauces.

Gluten Free (No Atta/Maida/Suji/Wheat)

Modern wheat contains certain proteins which are harmful for most individuals to a varying extent. Those who are more intolerant get to know about it, others never realize it. We have been tuned to think that our roti is the most harmless part of our daily meal and our Sabji or Daal could be causing us heaviness and bloating.

Many people see the benefits of a Gluten free diet within a week to fortnight of giving up on wheat. There are numerous options available for making roti / bread like Jowar, Millets, Besan, Quinoa, Kuttu and so on, which the Lettuce Lab harnesses in the most healthy and tasty way.

Sugar Free Natural Alternatives

Sugar Free

When sugar is removed from fibre (extraction) and refined (use of chemicals), it becomes harmful. It gets easily absorbed in our blood stream and causes sugar spikes. By using fibre containing natural sugar sources, we can still enjoy sweetness while avoiding organ damage and energy draining sugar spikes. We use a spectrum of healthy refined sugar alternatives in our kitchen without spoiling your experience of sweetness.

Oil Free

Similar to sugar, once oil is extracted (fibre removed) and chemically treated, it becomes harmful for our body. By using natural sources of oil in their original form like til seeds, coconut, nuts etc. we can get the required taste and effect in most of our dishes. Our food is made with a maximum of half a teaspoon of oil per portion and mostly, there is no oil at all.

Whole Plant Based

Raw forms of food are the best for your body, like salads and fruits. Our food has the minimum amount of processed ingredients and by retaining the natural fiber in our foods, we ensure that we are closest to nature. We do minimal processing, retaining fibre, nutrition and add a whole lot of health and taste in the mix.

Our green juices and other foods are packed with nutrition. Plant based diet stipulates use of five types of foods – Fruits, Vegetables, Nuts and seeds, Grains and Pulses with minimum processing to avoid lifestyle diseases. While science is in the public domain, we have mastered this art!
